Satureja montana - Winter Savory is a sub-shrubby perennial herb that is perfectly at home in well-drained scrabble in a xeric condition. Winter Savory is a densely mounding evergreen with small dark green leaves which turn maroon when cold seasonal temperatures settle. It has a long bloom season, mid to late summer, and the flowers are beloved by bees. The packed lavender-pink flowers loosely remind me of clustered mint flowers with which it is related (Lamiaceae). But fear not - this is a well-behaved plant that stays in place. Carole Miller from Topmost Herb Farm in Coventry, CT tells us that Winter Savory is excellent when used in most any bean dish.
